FIELD: food chemistry.

SUBSTANCE: invention relates to a method of isolating lipids from food products. The method of isolating lipids from food products is characterized by the following: a sample weighing 5 g is taken from food products, mixed with 75 g of a chloroform-ethanol mixture prepared in a ratio of 2:1.5, and thoroughly mixed, after which the resulting solution is placed in a separating funnel, from which the lower chloroform layer with lipids is drained, 15 ml of distilled water is added to the resulting extract, the cylinder is shaken, centrifuged, the lower layer is transferred to a flask with a ground section, connected to a rotary vacuum evaporator, after which the chloroform part is removed, and the isolated lipids remain in the flask.

EFFECT: method described above makes it possible to quantify fats in food products, obtaining values comparable to those specified in regulatory documents for food products.
