FIELD: food industry.
SUBSTANCE: vacuum evaporation plant contains in-series installed five milk raw material heaters, the latter is connected with plate heat recuperator connected with pasteuriser and made with possibility of milk raw materials heating from the last heater due to milk raw materials cooling from pasteuriser. Plate-type recuperator is connected to the first housing of four in-series housings of the evaporation plant. First housing is connected to second, second to fourth, and fourth to third housing, wherein second and fourth housings are provided with two successive sections of evaporator heating tubes, while third housings are provided with four consecutive sections of evaporator heating tubes. Each housing of the evaporation plant is equipped with a steam discharge union connected to the heating steam supply union to the evaporator of the next housing, and comprises evaporator with coaxially installed steam separator with formation of steam space between walls for removal of secondary steam. Steam discharge union from the second housing is made with the possibility of withdrawing a part of steam to the ejector, which is made with the possibility of obtaining heating steam for the first housing due to thermal compression with live steam. Finished product discharge union of the third housing is connected to a vacuum crystallizer-cooler or a finished product storage tank.
EFFECT: invention provides higher energy efficiency of the vacuum evaporator.
