FIELD: food industry.
SUBSTANCE: invention relates to food industry and can be used for production of extracts from vegetal raw materials used for production of alcohol-free beverages. Method of producing an extract from plant material, including milling plant material, water-enzymatic extraction of milled plant material using enzyme preparations of cellulolytic action and separation of the extract by filtration, in which for grinding vegetal raw materials with moisture content of 10–15% are taken, the vegetable raw materials are ground to particle size of 0.2–0.3 mm, cellulase and xylanase are used as enzymatic preparations of cellulolytic action for water-enzymatic extraction, water-enzymatic extraction is carried out with an aqueous solution containing cellulase and xylanase in an amount providing respectively 100 and 50 units of activity in terms of 1 g of dry substance of plant material, at a ratio of milled plant material to an aqueous solution containing cellulase and xylanase, from 1:13 to 1:15, temperature of 55–60 °C and constant stirring at a mixer rotation frequency of 1–2 s-1 for 1.5–2.0 hours, and separation of the extract is carried out by vacuum filtration.
EFFECT: method described above enables to achieve a high degree of extraction of P-active substances and organic potassium from plant material into an extract, as well as reduce the duration of the technological process by 1,5–2 times compared to the known method.
