FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to the methods of biologically active liquid extracts with increased selenium quantity production. Method includes preparation of vegetable raw-material and water-enzymatic extraction of medicinal raw-material composition. Dry medicinal melilot enriched with selenium is chopped till particles are 1-2 mm, the rest of raw-material - dried pepper meant, silky wormwood, needles of Siberian larch, honeysweet are chopped till 5-8 mm. Water-enzymatic extraction is carried out by proteolytic and cellulolytic enzymes under the temperature of 50°C during 3 hours, mixing every 30 minutes with the following extract filtration.
EFFECT: invention allows obtaining extract with high selenium output and biologically active properties with antioxidising effect.
