SUBSTANCE: invention relates to the food industry, and in particular to a method for obtaining a carotenoid concentrate from vegetable raw materials. The method for obtaining a carotenoid concentrate from vegetable raw materials includes its drying, grinding, extraction with an organic solvent, filtering the obtained extract and removing the organic solvent from the extract under vacuum. heating 0.4-0.6°C/s until a temperature of 40-45°C is reached, drying is carried out at a temperature of 40-45°C in the IR radiation zone to a moisture content of 15-20%, crushed to a particle size of 0.8- 1.0 mm, mixed with a solution containing cellulase, xylanase and protease in an amount providing 150, 100 and 50 units, respectively, activity per 1 g of dry matter of dried tomato pomace, at a temperature of 40-45°C, pH 5.4-5.6 and constant stirring for 1-1.5 hours at a ratio of dried tomato pomace : a solution containing enzymes equal to ( 1:12)÷(1:15), the precipitate is separated from the resulting fermented mass by filtration under vacuum, heated to a temperature of 83-85°C for 5-7 minutes, dried at a temperature of 40-45°C under vacuum to a moisture content of 8 -10%, cooled to a temperature of 25-30°C, extraction with an organic solvent is carried out in three stages at a ratio of crushed dried tomato pomace: organic solvent (w/v) equal to (1:10)÷(1:12), and constant stirring for 45-60 min at each stage, while acetone is taken as an organic solvent, the filtration of extracts obtained after each stage of extraction is carried out under vacuum and the extracts are combined.

EFFECT: implementation of the proposed method allows to obtain a high yield of carotenoids 89.7-90.2%.
