FIELD: food industry.
SUBSTANCE: invention relates to production of alcohol-free beverages, in particular, to production of fruit drinks. Disclosed is a method for production of fruit infusion, which involves first defrosting and milling of blackcurrant berries, extraction with drinking water with separation of the obtained mass into juice and cake and preparation of a decoction of dry milled mint leaves and carrot tops, then white sugar is added to the decoction and brought to boil at 90 °C for 2–3 minutes, cake is added to boiling broth, stirring and boiling for another 1–2 minutes, infusing until cooling, filtering through a sieve, then adding juice and stirring again, diluting the mixture with the cooled broth, with further cooling of the prepared fruit drink, with the following ratio of initial recipe components, wt.%: black currant berries - 50.0–70.0, white sugar - 0.65–0.80, dry milled mint leaves - 0.75–0.95, dry milled carrot tops - 0.15–0.25, water drinking water is the rest.
EFFECT: disclosed is a method for production of fruit drink with improved organoleptic and physical-chemical properties, enriched with biologically active substances due to use of natural vegetal raw materials.
