FIELD: food industry.
SUBSTANCE: invention relates to fish processing industry, namely to methods of fish preservation by salting using liquid salting mixture, and can be used for production of delicatessen fish dishes and snacks. Disclosed is a method of salting fillet of delicatessen fish, which includes primary processing of fish raw material, cutting into fillet, placing fillet with skin without bone in a container, wet salting and sending the semi-finished product for further processing operations, salting is carried out by pouring the laid fillet with a liquid salting mixture, which includes 50 grams of vegetable oil, whipped until a homogeneous mass, 83 grams of a beverage with an ethyl alcohol content of 35–45% “Cognac”, aged in oak barrels, 10 grams of table salt, 5 grams of pink peppercorns, 8 grams of sand sugar, taken per 1,000 grams of fish fillet with skin, after pouring with a liquid salting mixture, the fillet is sprinkled with table salt, sugar sand and pink peas, covered with a lid and delivered into a refrigerating chamber with temperature of 2–6 °C for 18 hours.
EFFECT: invention provides reduction of the technological process duration to 18 hours due to fish salting in a liquid salting mixture and production of quality lightly salted delicatessen fish with high organoleptic indices, nutritive value of the ready product and quality indices.
