FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to production of salted fish products for children alimentation. Method involves flensing herring into fillet, two-step salting, skinning, cutting, packing and packaging under vacuum. Wherein at first stage of salting rowed arrangement in container of herring fillet is performed with skin downwards with covering of each row with salting mixture, consisting of sodium chloride, potassium chloride and sugar sand, taken at ratio of 0.7:0.3:1 respectively in amount of 10 % of fillet weight. When salt content is 4-6 %, second stage is carried out, by introducing into the container of 4-6 % sodium chloride solution and holding for 20-24 hours. Wherein salting is performed in cooling chamber with temperature not higher than +10 °C and in tightly closed container. After salting fillet is skinned and frosted to -1 °C - -5 °C inside fillet. Then diagonal cutting of fillet is made with slices thickness from 0.2 to 0.3 cm with simultaneous packaging and packing under vacuum.
EFFECT: invention allows to produce snack product of high quality, directed for feeding children of preschool and school age.
