FIELD: food industry.
SUBSTANCE: method for fish preservation on production ships relates to fish industry and can be used in technology of fish preservation on production vessels, as well as onshore fish processing enterprises. Technical result is achieved by two versions by way of fish preservation using complex food additive based on sorbic and dehydric acid, as well as their salts of potassium sorbate and sodium dehydratate.
EFFECT: technical result of the proposed method is fast processing of large mass of fish, longer shelf life of fish by suppressing the development of bacteria, yeast and mould fungi while maintaining the organoleptic and microbiological properties of the product.
