FIELD: food industry.

SUBSTANCE: disclosed is a method of producing concentrated topinambur syrup, which consists in the fact that washed topinambur tubers are milled in a knife crusher, then ground material is soaked in water and ground in a rotary-pulsating apparatus to particle size of not more than 50 mcm by wet grinding with a hydraulic modulus from 1:2 to 1:15 at temperature of 75–85 °C and a pH level of 4–7 with simultaneous introduction of an enzyme preparation of pectofoetidin for enzymatic hydrolysis of mixture for 120 to 200 minutes, then obtained mixture is sent to extraction column, obtained extract is separated in a decanter centrifuge and then the obtained clarified extract is concentrated in a film vacuum evaporator to 50–75% of dry substances content to produce a syrup.

EFFECT: invention is aimed at production of concentrated topinambur syrup with increase in volume content of biologically active compounds, increase in output of the end product and reduction of production costs.
