FIELD: food industry.

SUBSTANCE: disclosed is a process line for the production of oligofructose syrup from topinambur, according to which, after the receiving hopper, installed in series are a conveyor, a steep bath, bubble type washing machine, brush type washing machine, inspection conveyor, receiving hopper with weighing device, grinder, hydraulic conveyor for supplying a mixture of water and milled topinambur into extractors intended for extracting inulin with hot water and obtaining juice. Further, there is a complex for juice purification, which includes a screw centrifuge, liquid separator, container for acid coagulation of protein, cartridge filters, capacity for adsorption cleaning with activated carbon, heat exchanger, bag filter, ultrafiltration unit, container for juice treatment with an enzyme preparation, heat exchanger, vacuum evaporation plant for production of concentrated oligofructose syrup, capping machine. Process line is equipped with a drying complex for production of dry pulp based on a drum drier.

EFFECT: invention increases quality and yield of finished products.
