FIELD: food industry.
SUBSTANCE: method for producing syrup from jerusalem artichoke, including grinding jerusalem artichoke root crops resulting in jerusalem artichoke chips, producing diffusion juice by mixing the jerusalem artichoke chips with an aqueous solution of citric acid, and extracting. The diffusion juice is then mixed with a solution of an enzyme preparation to conduct enzymatic hydrolysis resulting in fermented juice, the latter is filtered by means of a membrane unit resulting in permeate further subjected to ion exchange discolouration until discoloured juice is produced, and the discoloured juice is then condensed resulting in syrup. Also proposed is a process line for implementation of the method.
EFFECT: production of syrup from jerusalem artichoke.
