FIELD: food industry.
SUBSTANCE: disclosed is a composition for producing a coffee-chickpea mousse, which contains a main vegetable component, white sugar, a stabilizer and water. Additionally, the composition contains dry defatted milk and a taste-and-flavour filler. Main vegetal component is represented by chickpea paste; the stabilizer is represented by gelatine; the taste-and-flavour filler is represented by instant coffee which is used in the form of a beverage produced by way of brewing with water.
EFFECT: invention allows to produce coffee-chickpea mousse with improved organoleptic properties, increased nutritive and biological value, low caloric content.
