FIELD: dairy industry.
SUBSTANCE: invention can be used for the production of functional and dietary milk puddings at enterprises of the whole milk industry. The following is proposed: a milk pudding which is made of raw cow's milk with fat in dry matter of 3.6%, apricot puree, psyllium and chickpea extrudate with the following ratio of initial components, parts by weight: raw cow's milk with fat in dry matter of 3.6% — 83.6; psyllium — 1.2; chickpea extrudate — 2.6; apricot puree — 12.6.
EFFECT: increasing nutritional and biological value, as well as expanding the range of products of the milk puddings group.
