SUBSTANCE: invention relates to food industry, in particular to laboratory installations for growing bakery yeast. All existing laboratory installations, as a rule, are of small volumes and cannot simulate the real cultivation environment occurring when growing yeast on an industrial scale, where the surface ratio of the gas-liquid phase contact and the mass-exchange characteristics of the yeast-growing apparatus are of primary importance. Laboratory installation operates under vacuum conditions and consists of two vertical pipes, one of which has a larger diameter, with a dispersing element for aeration of the culture fluid and a pipe of a smaller diameter for reverse circulation. Pipes are interconnected from below and from above to form a closed circulation circuit. Vertical pipe of the larger diameter is connected to the vertical pipe of the smaller diameter by means of a hydrocyclone for separation of carbon dioxide together with the spent process air from the culture liquid. In the lower part the pipes are connected by a hydrocyclone for separation of matured heavy yeast cells. Larger-diameter pipe is a composite consisting of several interchangeable cylinders of the same size. One of the cylinders is equipped with a dispersing element and can be installed at the required level in order to change the height of the aerated layer of liquid and change the speed of the circulating flow. Vertical pipe of smaller diameter is spaced from the pipe of larger diameter at a distance not exceeding the value of diameter of the larger pipe.

EFFECT: installation for growing bakery yeast is proposed.
