SUBSTANCE: methods for the production of baker's yeast. The method for producing baker's yeast involves introducing pitching yeast, nutrients and raw water into the yeast growing apparatus at the beginning of the process, growing under vacuum with aeration with pre-cooled air, and continuously adding nutrients. In this case, ammonia gas is used as a source of nitrogen, which is supplied at the moment air enters the dispersing elements of the aeration system of the yeast growing apparatus.
EFFECT: increasing the solubility of air oxygen in the culture liquid, providing sterilization and dehumidification of air, improving the quality of yeast and increasing its production.
