SUBSTANCE: invention relates to production of rennet. Method for production of rennet is implemented on a process line, including a batcher, a sieve, a scale for dry sodium chloride, dosing pump for water, a container for mixing water and dry sodium chloride, a defroster, a rennet grinder, a heat exchanger, an ultrasonic extractor with a low-speed mixer and a water jacket, a centrifuge, dosing pump for hydrochloric acid, a vessel for activating an enzyme with a water jacket, a filter press, a filling machine, a refrigerating chamber, a heat pump, consisting of a compressor, a condenser, an evaporator, a thermostatic valve operating in a closed thermodynamic cycle, in which freon is used as a working substance. In the heat pump, due to compressive stress of freon, its condensation in the condenser is carried out and water is heated by means of recuperative heat exchange, used for heating of air supplied to defroster for rennet defrosting and heating of heat exchange jacket of ultrasonic extractor and vessel for enzyme activation. In the heat pump evaporator, due to condensation during cooling, air from the defroster is freed from moisture, after which it is used to cool jars with liquid rennet packed in them.

EFFECT: invention makes it possible to intensify process modes of rennet production process to achieve its maximum activity.
