FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to confectionary branch, and may be used in production of confectionary products from chocolate and vegetable raw materials. One proposes a confectionary product made of white Belgian chocolate, fresh finely ground carrots and freshly squeezed carrot juice. Content of white Belgian chocolate is 60–70 wt.%, finely ground carrots – 20–26 wt.% and freshly squeezed carrot juice – 10–14 wt.%. In the process of making the confectionary product, melting the chocolate mass and introducing finely ground carrots and freshly squeezed carrot juice into it is carried out at 42–45 °C subsequent tempering, pouring into moulds and cooling.
EFFECT: invention ensures production of chocolate enriched with beta-carotene, with original colour from light to saturated peach colour, texture of “fudge” type confectionary product.
