FIELD: food industry.
SUBSTANCE: disclosed is a method of producing chocolate, which involves mixing ground cocoa, cocoa butter, sugar powder, dry whole milk, mixing, conching and tempering the chocolate mass, molding it into molds, cooling, distribution of filling on chocolate pieces, pouring on top with a layer of chocolate, cooling, extraction from molds, wrapping and packing of chocolate. Preparation of filling containing β-carotene, is carried out by cooking carrot pieces, their pulverizing, followed by boiling with sugar powder, food agar, citric acid and cinnamon, cooling, stirring, introduction as filling into chocolate mass.
EFFECT: invention is aimed at production of chocolate with improved organoleptic properties, enriched with β-carotene.
