FIELD: food industry.
SUBSTANCE: invention relates to production of food additive E516, which is calcium sulphate. Method of producing the food additive E516 involves drying of citrogypsum from excess moisture in a drum dryer for 4 hours at temperature of 60°C with constant stirring. Then the dried material is fed into a system of vibrating sieves with the smallest cell size of 44 mcm for screening and cleaned in a magnetic separator.
EFFECT: invention enables to reduce energy consumption of the method and reduce the cost of the obtained product due to use of citrogypsum as a raw material, which is a by-product of citric acid synthesis.
