FIELD: food industry.

SUBSTANCE: group of inventions relates to food industry, namely to means for saturation of liquid with carbon dioxide, and can be used for saturation of low-alcoholic beverages, soft drinks and mineral waters with CO2. Disclosed is a method of saturating a liquid with carbon dioxide gas, which consists in the fact that liquid is supplied from a pressure chamber under pressure through a narrowing device to a receiving chamber, increasing the flow rate of the liquid and creating a vacuum in the receiving chamber by passing the liquid through the opening of the narrowing device, increasing the surface of the liquid by transferring it into a state of wet saturated vapour, providing the passage of carbon dioxide from the gas chamber into the receiving chamber through the supply openings of the gas supply channels across the direction of movement of the liquid, creating a turbulent flow of the vapour-gas mixture in the receiving chamber, wet saturated vapour is mixed with carbon dioxide under conditions of an increased mass exchange surface, the mixed medium is supplied from a receiving chamber into a mixing chamber, made in the form of a longitudinal channel with a constant diameter, in which a vapour-gas mixture is formed due to flow turbulence, after which the obtained vapour-gas mixture is fed into a condensation chamber with a diffuser at the outlet and condensed in the flow to obtain a carbonated mixture, at that, as the narrowing device, a diaphragm with inlet and outlet edges is used, as the receiving chamber, an initial section of the mixing chamber is used, adjacent to the outlet edge of the diaphragm opening, measuring at least the temperature of the liquid supplied for mixing and the vacuum value in the gas chamber, controlling and maintaining said parameters, providing an increased degree of dissolution of carbon dioxide in the liquid, and carbon dioxide is directed into the receiving chamber perpendicular to the direction of movement of the liquid supplied to it, wherein length of diaphragm hole in direction of fluid movement in it is made within 0.1-0.3 of its diameter, supply openings of gas supply channels are made with height in direction of liquid movement through receiving chamber within 0.6-0.8 of diaphragm opening diameter, thus providing total cross-section area of gas supply channels within 1.8-3.2 of area diaphragm opening cross section, diameter of the mixing chamber is made in range of 1.1-1.2 of the diaphragm opening diameter, and the mixing chamber length is not less than six times its inner diameter. Also disclosed is a device for saturating a liquid with carbon dioxide gas, comprising a housing with sequentially located a liquid pressure chamber, a narrowing device, a receiving chamber with a cylindrical inner surface located coaxially with the opening of the narrowing device and communicated with the gas chamber by means of supply openings of gas supply channels, located across the receiving chamber opening geometrical longitudinal axis, a mixing chamber made in the form of a longitudinal channel coaxial to the opening of the narrowing device, a condensation chamber made in the form of a longitudinal channel coaxial with the mixing chamber and a diffuser located at the outlet of the condensation chamber, at that, the narrowing device is made in the form of a diaphragm installed at the outlet of the pressure chamber, with an opening having inlet and outlet edges, wherein the length of the opening of the diaphragm in the direction of fluid movement in it is made in range of 0.1-0.3 of its diameter, receiving chamber is made on the mixing chamber initial section, adjacent to the diaphragm opening outlet edge, supply openings of gas supply channels are made with height in the direction of liquid movement through the receiving chamber in range of 0.6-0.8 of the diaphragm opening diameter, while providing the total cross-sectional area of the gas supply channels in range of 1.8-3.2 of diaphragm opening cross-section area, diameter of the mixing chamber is made in range of 1.1-1.2 of the diaphragm opening diameter, and the mixing chamber length is not less than six times its inner diameter.

EFFECT: invention increases the degree of saturation of the liquid with carbon dioxide and increases the period of resistance to decomposition of the mixture into constituent components.
