FIELD: chemistry.

SUBSTANCE: invention relates to a method of producing tripotassium citrate monohydrate C6H5O7K3⋅H2O, which is used as E322 additive. Method is realized by mixing citric acid and potassium hydroxide in molar ratio of 1:3 with a mother solution containing 60-66 wt. % of tripotassium citrate. Reaction is accompanied by significant release of thermal energy, as a result of which partial evaporation of water occurs and solution containing 75-82 wt. % of tripotassium citrate is obtained. When it cooled to temperature of 10-30 °C, a suspension is formed, which is separated to obtain a monohydrate of tripotassium citrate in crystalline form and a mother liquor, which is optionally returned to the step for synthesis of tripotassium citrate.

EFFECT: method increases output of the end product.
