FIELD: biotechnology. SUBSTANCE: strain being producer of Xanthomonas campestric is cultivated on medium which contains glucose, bactopeptone and protein-vitamin concentrate, quantity of said medium is 2.5-6.0 g/l. The process is carried out by aeration and by mixing, portion of protein-vitamin concentrate being initially added into said medium, residue of it (its quantity being 40-60) is added during exponential phase and/or during phase of delayed growing. Desired product is isolated with the help of commonly used methods. EFFECT: increases proteolytic activity of desired ferments. 2 tbl
