FIELD: baking industry. SUBSTANCE: in kneading device body there are working tools having kneading augers and cutting members alternating in the product advancement direction. The augers mix and advance dough along the body, and the members regularly cut dough. Extrusion is performed in a screw extruder or on rollers. The temperature of dough with moisture content 25-40% mass does not get higher than 50 C, and kneading is done within 6-60 s. EFFECT: higher efficiency. 13 cl, 11 dwg
