FIELD: food industry. SUBSTANCE: invention relates to cleaning of macaroni presses, in particular, screws of screw machines, mixers and other machinery. Proposed method of cleaning provides treatment of machines by water, alkalis and acids. Cleaning liquid is directed into hydraulically sealed closed screw extruders and/or mixers. Cleaning liquid is directed and filtered in circulation circuit through central reservoir. Device for cleaning macaroni making machines has central reservoir furnished with filter and connected by pipelines with machine to be cleaned. Central reservoir is connected with plant for reprocessing of remnants and sewage water. EFFECT: reduced cost of mounting and control. 9 cl, 3 dwg
