FIELD: food-processing industry. SUBSTANCE: method involves forming elongate noodle doughs in the form of sheets or strips; drying and cutting solid doughs into pieces of predetermined package length; conveying noodle sheets arranged in pairs by retaining device of conveyor, which is conjugated with cutting device, onto transfer conveyor having higher speed. During conveying, noodle sheets are overturned and wastes are simultaneously sorted out with following linear transportation and stacking of noodle sheets. Ready product is packaged on packaging conveyor. Apparatus has elongate macaroni press for forming doughs, device for suspending doughs on rods, conveyorized drier with stabilizer, device for cutting doughs into pieces of predetermined length, packaging conveyor and device for preparing doughs for packaging. The latter has conveyor joined with cutting device, transfer conveyor positioned below conveyor joined with cutting device and supporting device for overturning of noodle sheets.
