FIELD: food industry. SUBSTANCE: glumes are crushed to particle size 0.5-0.7 mm, washing is done with 1.5-1.4% aqueous solution of sodium chloride with water duty 1: (15-20) at 80-82 C for 25-30 min, and acidic hydrolysis-extraction is performed with mixture of equal volumes of 0.1-0.15% hydrochloric acid solution and 0.05-0.07% oxalic acid solution (raw material/extracting agent ratio 1: (12-15) at 0.123-0.156 MPa and 105-112 C for 70-8- min. This is followed by removal of clarified hydrolysate, vacuum-concentration to 2.2-2.5% content of pectin matter, and precipitation of pectin with 92% ethanol containing hydrochloric acid (12.5-15.0 ml/l) with ratio extract/precipitating agent 1: (2.0-2.5).
