FIELD: fat-and-oil industry. SUBSTANCE: method of processing sunflower seeds involves the steps of: frying the seeds to moisture of 2% , calibrating and sorting them, breaking down to produce shell and three fractions of nucleus, such as powdered and cracked fractions and whole nuclei, removing the cracked fraction so as to use it in confectionery industry, mixing shell, powdered fraction and whole nuclei and humidifying the mixture to 9% moisture, heating to temperature of 115 degrees C and pressing the treated mixture so as to extract fat, the seeds being cooled to temperature of 50 degrees C after frying. The apparatus is characterized in that a frying device is disposed before a calibrating device and devices for air and sieve separation and mixer-humidifier are located before pressing device.
