FIELD: milk industry. SUBSTANCE: method involves additional condensation of whey, separation for removal of proteins, condensation, crystallization of condensed whey, centrifugation of crystalline mass and drying of crystals. After separation whey is electrodialyzed to remove 70-75% salts, after that demineralized whey is refined. Refined whey is condensed, and process is carried out up to 54-58 dry matter. EFFECT: improved method of lactose production.
