FIELD: food industry.
SUBSTANCE: invention relates to dairy industry and may be used in production of milk sugar. Milk sugar production method envisages defatted milk ultrafiltration, UV-permeate nanofiltration till the demineralisation level is equal to 70–90 % and dry substances content is equal to 23–25 %. At that, in order to achieve the required level of demineralisation, diafiltration is used, which is started at raw material bulk factor value of 2.5–3. Then, condensation is carried out on a vacuum apparatus to dry substances content of 59–61 %, crystallisation of lactose with a cooling rate of 2–5 °C/h to temperature of 10–12 °C for 18–22 hours, separation of crystals from the mother solution, washing and drying.
EFFECT: invention allows to achieve raw material demineralisation level of 70–90 %, to produce a high-quality product.
