FIELD: milk processing. SUBSTANCE: method involves preparing lactulose solution, its isomerization, acidifying and concentrating thus prepared solution followed by crystallization of lactose and separation lactose crystals of syrup. Mentioned above isomerization is carried out by adding alkali into unpurified solution of lactose to prepare lactulose. When crystals of lactose are isolated its residue together with galactose are affected by lactic acid fermentation. Thus prepared syrup is pasteurized and purified of protein and dyeing compounds with the help of adsorbent. The process is followed by concentration till content of dry material is 48-52 Lactulose syrup is diluted till lactose content is 8-10 and lactic acid fermentation is carried out. Said process takes place by adding inoculate of Lb. casei into thus prepared solution, its quantity being 3.0-4.0 mass as calculated for mass of solution. Said fermentation is carried out within 48 h at 30 C and pH 6.8-7.0, CaCO3 as a powder being added into solution. EFFECT: improves efficiency of the method. 3 cl, 1 tbl
