FIELD: home preservation of fruits and vegetables. SUBSTANCE: fruits or greens are placed into glass can, preserving agent is added to the can, and the can is sealed with a cap. As the preserving agent there is used admixture of alkaline metal sulfite and weak base salt, which is placed to plastic package and wetted with water prior to its usage. The ingredients of mixture are used in the following ratio, % by weight: alkaline metal sulfite 10-90, weak base salt - balance. EFFECT: provides high palatability.
