FIELD: food industry.
SUBSTANCE: invention relates to preservation of food products and can be used as antibacterial preserving agent. Preservative for food products based on neutral anolyte with concentration of active chlorine (ACC) 500 mg/l, with ratio of sodium chloride and edible soda 1:5, with values of redox potential ORP = +500-+800 mV at pH of 7.5-8.0. Preserving agent is added in ready product at rate from 0.5 % to 5 % of total weight of product provided retention of preserving agent in product during time and at maintenance of storage temperature corresponding to preserved product.
EFFECT: invention allows to enhance bactericidal activity of preserving agent, eliminating odour of chlorine from preserved product, prevent their microbiological decay, development of harmful microorganisms in product, formation of toxins, mold formation, unpleasant taste and smell, as well as increase storage life of products.
