FIELD: production of fats and butter. SUBSTANCE: method involves purifying cacao beans, their searing and grinding, separation cacao husk of coarse- grained cacao, producing grated cacao followed by compressing. Before compressing grated cacao is processed in active zone providing shearing rate 1000-6000 c-1, the process is carried out by applying alternating electromagnetic field having magnetic induction 0.10-0.50 T.
