FIELD: food industry, aromatic principle agent preparing. SUBSTANCE: initial mixture of aromatic principle components consisting of the plasma or serum blood of cattle, xylose, cysteine, sodium sulfide, ascorbic acid and water is added at concentration 1.0-2.5% of polysaccharide mixture mass. The source of latter: powder-like thermocoagulating simple ether of cellulose. Prepared mixture is heated under hermetic conditions at 90-130 C for 1-3 h.
