FIELD: processing of food products. SUBSTANCE: vessel has bottom with surface adapted for mounting on heat source and provided with radial depressions 7, whose depth is equal to 1/4 - 1/2 of vessel bottom thickness. Radial depressions 7 divide bottom surface into like sectors. Depression width is variable within the range of 1/5 of bottom thickness to the value exceeding bottom thickness by 2-2.5 fold. Radial depressions may be made by casting or machining and width of depressions may be increased from bottom center to its periphery. Bottom surface adapted for mounting on heat source is made in the form of a circle with round slot 9 in the center. Radius of slot 9 is below half the radius of surface adapted for mounting on heat source. Slots may have section widening in the direction to peripheral portion of bottom. Radial depressions may be in two versions. Depressions of the first version have peripheral and adjoining vessel side surface and depressions of the second version have closed ends.
