FIELD: food industry. SUBSTANCE: method involves supply of source solution, in the process of formation of grains, into liquid that is in the state of uniform rotation. The solution is supplied through one or several holes. The holes are 3-5 mm in diameter. The grains are transported by gravity through valves, and the processes of cooling and separation of the grains from the liquid are concurrent with the process of drain of the grain-and-oil mixture into a vessel with cooled water. The water in the vessel is also stirred to rotate. The device for implementation of this method has a vessel divided into two parts: the upper part for formation of caviar grains and the lower part. The latter cools the grains and separates them from oil. Both are provided with electric-driven stirrers. The stirrers are vanes mounted in the center of each vat for rotation. They are also provided with transport valves, and the lower one is provide with a valve for drain of oil. The valve is mounted level with the "forming liquid-water", and the vat for the source solution is an open funnel with one or several outlets 3-5 mm in diameter. They provide communication between the funnel and vat. The funnel has several isolated compartments, and one of them is used for filling.
