FIELD: food industry. SUBSTANCE: sodium polyphosphate as stabilizing agent is added into blood of slaughtering animal. Then blood is cooled and is affected within 10-15 min by ultrasound treatment, ultrasound generator with output power being more 3 kWt and frequency 20.35-23.65 kHz is used. Thus treated blood is fed by gravity into apparatus to degasify blood and to saturate it with carbon dioxide. The former process takes place by vacuum evaporation at 0.07-0.09 atm within 15 min. The latter process is carried out by mixing during 25 min, pressure of carbon dioxide being maintained within 1.5-1.7 atm. Thus treated product is fed for packing into polyethylene packets. Said packets are sealed and affected by heat treatment. The process is carried out within 90-95 min by immersion into water being heated to 72-74 C. Then cooling to to 2-4 C and vacuum sublimation or drying by super high frequency are carried out. EFFECT: improves efficiency of the method.
