FIELD: refrigerating engineering. SUBSTANCE: method consists in placing the articles on the surface of transport facility, blowing them with cold air on one side and bringing them in contact with transport facility surface being cooled on other side, freezing the surfaces of articles which are in contact with cold air till strong solid envelope has been formed at the top of articles when the core is soft and layer which is in contact with surface of transport facility is not frozen, further tumbling and final freezing effected at blowing the articles with air. Apparatus for cold treatment of small-piece articles has heat-insulated chamber, unit for receiving and partially freezing the articles which consists of belt conveyer mounted on sectional frame; each run of this conveyer is enclosed in individual box; upper box is brought in communication with air cooler fan. Conveyer has tension and drive drums and is equipped with rollers for centering the belt. Section frame located beyond the chamber is immovable while that located in the chamber is rigidly secured at the end of drive drum; its other end is mounted movably for compensating the thermal expansion and compression. Located under transport facility is screened or perforated drum with inner endless winding having two sections arranged in succession first of which is intended for separating the articles by couplings formed by sinew of meat stuff; second section is used for simultaneous cleaning of articles and final freezing.
