FIELD: food industry. SUBSTANCE: taste modifier is produced by extracting fresh or dried fruits of Curuculigo latifolia with a salt solution, concentration at least 0.01 M, and preparing extract containing curculine protein. Also disclosed are compositions for manufacturing chewing gum and mouthwash containing this modifier in the amounts, respectively, of at least 0.01 mg per unit quantity of rubber base and from 10-3 to 1 wt.-% of mouthwash composition.
