FIELD: food industry. SUBSTANCE: device has a vertical housing with a heat-shielding cover and a working chamber with a cover and with an exhaust branch pipe disposed in it. A hermetic heating jacket is placed between the walls of the chamber and heat-shielding cover. The lower part of the jacket is filled with water and is equipped with means for its heating up. The device also has a refrigerating chamber with the pipeline system whose input is in communication with the exhaust branch pipe of the working chamber. The refrigerating chamber is in communication with the output of the pipeline system of the refrigerating chamber through a branch pipe for the condensate removal. The device also has a reservoir for collecting the condensate with a branch pipe for its discharge with a valve and a water-jet pump being in communication with the source of water supply through the intake branch pipe. The pump is connected with the refrigerating chamber by means of the exhaust branch pipe and with the reservoir for collecting the condensate by means of a branch pipe for sucking off the gases with a valve. The means for heating the heating jacket are made as heating elements and are disposed in the water. The upper part of the heating jacket is connected with the branch pipe for sucking off the gases by means of the pipeline for the vacuum evaporation with a valve.
