FIELD: food industry. SUBSTANCE: hydrolysis of pectine-containing raw materials is carried out in two stages, the firtst one at a residual pressure of 0,20-0,85 kgf/cm2, a temperature of 50-90 C, and pH 1.5-4.0 for 0.5-1.0 h, and the second one at 75-95 C, pH 1.0-3.0 for 0.4-2.5 h . Extraction is conducted at 40-80 C for 0.4-1.5 h with continuous mixing. EFFECT: higher efficiency.
