FIELD: food industry. SUBSTANCE: plant raw is used as fresh or fresh-squeezed form. Its washing is carried out with water up to the content of dry soluble matter in washing water 1.5% not less. Hydrolysis-extraction of pectin substances is carried out with water which is preliminary subjected for electrodialysis between bipolar and anionite diaphragms in the presence of 0.15-1.2% aqueous solution of mineral acid salts at specific electric energy consumption 0,4-1,0 kW·h/m3, at pH 0.6-2.0. Before extract isolation hydrolysis mixture is combined with washing water at the ratio providing pectin hydrate content in the end product 0.5% not less. EFFECT: improved method of pectin product preparing.
