FIELD: food industry. SUBSTANCE: method for forming a dough sheet of a preset width and height from dough mass of irregular volume involves contracting the width of the dough sheet, starting a discharge conveyor disposed downstream (along the process) of the delivery conveyor at a constant speed, simultaneous changing of the speed of delivery conveyor, then rolling the dough sheet of the discharge conveyor. Delivery conveyor is set in motion on the basis of the data on any detected change of dough width. There also are devices for the realization of the above method.
