FIELD: baking industry. SUBSTANCE: method involves periodically compressing and releasing dough blocks; moving dough blocks downward between rolls for forming continuous dough strip from which different kinds of bakery products are manufactured during continuous process cycle. Apparatus has rows of rolls arranged in opposed relation so as to form V-shaped section of rows. Rolls are mounted for rotation and reciprocation to provide coming in contact one with another and separating one from another for periodical compression of dough blocks and releasing them one from the other. EFFECT: increased efficiency, simplified method and construction and enhanced reliability in operation. 9 cl, 5 dwg
