FIELD: food industry. SUBSTANCE: method involves injection mixing of the product with steam, forming a steam-liquid mixture and transporting it at an ultrasonic speed in said mixture. As the steam-liquid mixture moves through a diffuser, the mixture is subjected to a shock wave to ensure transition of said mixture into a single-phase liquid. Before this shock wave the steam-liquid mixture is transported under a pressure below 50 kPa. The single-phase liquid after the diffuser is throttled and the pressure in the shock wave is raised by at least 100 kPa. EFFECT: higher efficiency. 1 dwg
