FIELD: food industry. SUBSTANCE: heating of water-yeast suspension and destruction of membranes of yeast cells are carried out by injection mixing said suspension with steam. Thus prepared steam-liquid mixture is transported, said process is carried out under vacuum and it is followed by compressing and by transition of steam-liquid mixture in single phase liquid. Desired compressed and heated water-yeast suspension is throttled. EFFECT: improves efficiency of the method. 7 cl, 1 dwg
