FIELD: dairy industry. SUBSTANCE: method involves producing dispersed macrocolloid by using an 1-20-% aqueous solution of carbon, separating macrocolloid particles by applying shear forces to transform said solution into gel in which average size of particles varies from 0.1 to 4.0 microns with less than about 2% of the total number of particles larger than 5 microns in diameter. The solution is homogenized and the water phase is removed. Before homogenizing, carbon is cross-linked while after homogenizing, the water layer produced by settling of macrocolloid particles is filtered. Carbon is constituted by starch or dextrin or resin, or conjek, or cellulose, or a mixture thereof. Carbon may also be constituted by cross-linked starch, quinoa, cross-linked dextrin, cross- linked conjek, or calcium alginate. EFFECT: higher efficiency. 5 cl
