FIELD: biotechnology. SUBSTANCE: method involves autolysis of concentrated viable settled yeast cells obtained in the production of dry grape wine. The cells are preliminarily suspended in drinking water. The autolyzate is heated before sediment is separated and the transparent phase is vacuum- condensed. The stage of autolyzate exposure to cold is excluded owing to washing of settled yeast prior to autolysis, and the concentrate is supplemented with B-group vitamins.
