FIELD: food cooling and freezing facilities. SUBSTANCE: food cooling or freezing plant has closed case 1 accommodating cooling facilities 2 whose operating cycle compresses working period within which they are functioning and idle period when they are off and plant may be cleaned during this period. Plant is provided with facilities for raising temperature within case for idle period to value sufficient to kill bacteria (preferably, to 72 C) and with those meant to supply sterile air free from bacteria into case to raise pressure within it above ambient value during working and idle periods. Method for preventing growth of bacteria within plant involves supply of vapor or water and detergents into case during working and idle periods so as to maintain temperature of up 72 C inside it and delivery of sterile air by means of fan through bacteria filter for time period until temperature inside case rises above specified value (preferably, above 0 C). During working period, sterile air is fed through compressed-air cylinder and through outlet nozzles placed within case. EFFECT: improved design. 14 cl, 5 dwg
